lazy thermostat, stop panicing. its just being a little tardy to open.
if your cooling system is perfectly capable of holding its 14 psi you can go 105 before you have to worry with just straight water, with coolant mixed properly you can go 115 and your limit is around 120.

leave it, do some short trips it might smooth out, its doing what you want it to do when you finally put the heater back in for winter. Trust me on that.

its a confidence and experience thing...
relax some, so long as the coolant temp is coming down when you need it to, the expansion tank stays full, doesnt spurt coolant and the thing doesnt stay over 100 at high idle you've got it covered.
I promise, if you ever come for a ride in the lectured D1 you're never going to worry about your cooling system ever again if I take you for a "sprirted" drive"
keep an eye on it, keep it under 105 keep it full. easy.
(those numbers work for both speed and fuel as well as temperature and coolant)

only reason i worry is that everyone always says how long these things take to heat up and mine was the same previously with a pretty much completely blocked cooling system and now everything new and it heats up quicker than my 2005 honda accord. that combined with the fact that i have a brand new $1000k + cylinder head is what makes me cautious.
i will take your advice and do short trips and keep a close eye on it. only after ive finished setting up the ems2 though. the guests leave in 2 days and then i will get back on it and solve this.
Mine takes ~10min of driving for the thermostat to open and the gauge shows 78C when that happens as that's where it stays unless hills, AC, or higher top speed etc. I'm paranoid when it gets to 85C.
other thing i need to do is tap a bigger thread or install a helicoil to the top bolt on the water pump (the one that also holds bracket with hose clip and protects it from belt). the new (secondhand) housing i bought gave way very easily when i did up that bolt. there is a bit of thread left on the end which just gives a bit of tension but not enough for my liking or to instally the bracket properly.
wondering whether i can just drill slightly bigger hole and tap it upto m12 or m10 depending on what the size is now, without taking pump off.
