Good move to be replacing the tyres if they are a 2007 build.
As others have said 245/75 work well with minimal mods.
Don't put off the engine temp stuff though. As a minimum get yourself a temp monitor (I'm a fan of the engine watchdog ones myself and currently have 3 of them on various vehicles ).
It's pointless cooking an engine from a simple hose or header tank failure when it's likely preventable with a $150 temp monitor.
