Starting batteries are selected by the ability to deliver cranking amps not amphours as it is often difficult to get the amphours at anything like the current required for starting. Lots of batteries using the flat plate type electrodes can't be discharged to low levels as often as storage/deep discharge batteries. I think you will find that the optima and other acid glass mat spiral wound deep discharge batteries can also develop a good number of cranking amps as well. Therefore some gain would be had from having the two yellow tops in there instead of one big starting battery.
