How tight do you do the oil bolt for the turbo, the banjo bolt?

As it's copper and can crush easily

Actually it is meant to crush - note that used washers will be “work hardened” and likely will require over tightening to get them to seal so always use new washers. I buy suitably sized ‘blister pack’ punched copper washers and gently flatten them then anneal them myself. Perfect installation every time
