    Mu Kratha' or Mookata, or Thai BBQ Steamboat

    Hello All,

    Does anyone have any recipes for "Mu Kratha" or "Mookata" or "Thai BBQ Steamboat"? I have found numerous critiques of restaurants in Asia or Asian restaurants located in other countries who use Mu Kratha. However, actual recipes seem to be in very short supply. Some videos mention how the bowl section is filled with "Chicken Soup" or "Chicken Stock".

    I would really like to know if it is just like the chicken stock that can be bought at the supermarket or whether there are particular Thai ingredients in the stock? Also, how to make dipping sauces that may go with the cooking style?

    Searches for Mu Kratha or Mookata Recipe books online drew a blank too. Or would I have to track down Thai cookbooks in the hope they may cover this style of cooking?

    This all started as a quest to identify the type of table-top bbq that was featured on one of Stan Grant's shows which featured an interview at restaurant. The closest I found was a Thai BBQ called either a "Mu Kratha" or "Mookata" or "Thai BBQ Steamboat". Various sites describe how the term originates in the Thai language where mu (Thai for “pork”) and kratha (“pan”). There are also references to the same unit as: Mongolian or Korean BBQ.

    I watch a few cooking shows...no not MKR and such like...they seem to boil up bones and other things to make that stock...probably a bit more flavoursome than the packets of stock.

    This looks like an interesting and fun way to cook up a feed
    I may have a squiz about the place to see if I have a couple of old plough disks to knock one of these up with.
    I am thinking that a small disk inverted onto a larger one and welded there could do the job quite nicely, the heat would be able to rise up through to centre holes in the disc to heat up the middle bit nicely whilst still heating up the soup/stock cooking bit around it

    Yes they use a Chicken stock / soup..

    Gai stock with Mu as the main meat.

    Gai is Chicken
    Mu is pork.

    In Italy, you will get different recipes, for a dish we see here, from village to village. From what I've seen, Thailand is no different. Bear in mind, Thailand stretches from the Muslim part near Malaysia all the way up to Chiang Rai, and Issaan food, or Lanna.

    There are no fixed recipes for any cuisine, (apart from certain French dishes of course). Dig in and enjoy.

    Personally, I prefer the food from the North. I can only take so much coconut milk.

    Tombie knows more about it than me, so take his advice on the stock thing, but don't limit yourself looking for authenticity, because that is in the eye of the beholder.

    But, absolutely memorable. And the people who make it! I think the Northern Thais are the most friendly people on earth. Possibly it's the chillies.
