    Watched a film last week where the French Winery used bottle shaped Concrete Vats. The woman explained that it kept their wines at a stable temp. Now most wineries have SS Vats Refrigerated for that.

    The bloke next door (now in Margaret River I believe) spent the best part of the year in Italy teaching them how to make better wine. At the end of Vintage pump hoses were just disconnected & left laying on the floor, was just one instance he described. He was an Italian as well. Must be in some of their blood.

    OZ gets the Know How & promptly exports it OS. Probably for a good price?

    There was a TV show about 15 years ago I saw about the smaller French wineries and the sheer filth, mould over everything was unbelievable.

    Showed the transformation when the Aussies had been there.

    It's the reason you can drink an $85 shiraz every night here these days that never disappoints if you know what you're doing. Made with science at the forefront.






    That's $85 a case............ crack the cap, leave it for 2 weeks in a cupboard and it's like a $40 bottle.
