Not a good pic. This flatty was 49cm in length. Plenty of flesh on that size fish.
All I do is gut and gill them, wrap in aluminium foil, leaving the scales on to retain moisture and cook for 7-10 min a side, depending on size.
When ready, the skin, with scales, peels off like a glove.
I caught more, but don't freeze fish or keep more than a feed a day.
