Unfortunately the way a virus mutates is being impacted by modern medicine.

Traditionally a virus does not want a host to die and it often mutates from a deadly virus to a less deadly version to protect its longevity by keeping hosts alive. Look at the Spanish Flu where combined with building immunity in the population and mutations after a couple of years (about the time Covid has been around) the infections petered out albeit with a huge death rate in those few years.

With Covid we have brought in vaccines relatively early which do not kill the virus but reduces its damage - however as natural processes have been used the virus does not need to mutate to a less viral version as people are not dying like they would have in the past. If modern medicine had not intervene I would suspect that like the Spanish Flu, Covid would be by now starting to reduce naturally to become just another flu through natural herd immunity and less virulent variations - the issue is that many more millions of people around the world would have died.

So I would expect that Covid will remain a highly virulent virus that will have to be held in check by modern medicine rather taking a more natural process to becoming "another flu" over a period of time.

Now not suggesting it should have just been left alone to run its course because the death rate would have been horrific but just highlighting that managing with modern medicine also has consequences such as the virus hanging around much longer than it normally would have by science interrupting the natural selection process.

Did they close it? No. The rule now states you can visit your second property in the regions from a locked down LGA to feed your animals, and check your property.

Not exactly as you state, you now need to apply for a permit to travel out of Sydney and only one person can attend. Would you suggest that leaving animals to starve is a good idea?

Why does it take more than one person to feed the animals Or better still get someone that lives locally to do it for you???
Nobody is saying that the animals have to starve, They just have to be more organized how this is done without jeopardising anyone else.

Why is that people are always looking for loopholes to get around doing the right thing??

You actually couldn't visit a farm to check animals during our WA lockdown earlier this year. Hobby farmers had to ask an onsite neighbour to check their stock. Can't say i agreed with it at the time, but that was the rules...
