Yes chock the front wheels and transmission in neutral .
Tried to adjust the EPB yesterday but could not turn the rotor to find adjuster nut (or is it me that's the nut). I only had one wheel raised off the ground and I assume that since it's in Park all the wheels are locked up. Would I be able to turn the wheels if I had the other rear wheel lifted up as well or is there another trick to this?

I found it easiest with both rear wheels off the ground, gearbox in neutral (and park brake off of course...) From memory the adjuster sits at 12 o clock position, so rotate the drum until the adjuster sprocket appears at the opening. My tip would be to pull the drum off (you need to remove the caliper to do this but that's easy), give it a good clean out with compressed air and brake cleaner, lube the pivots with lithium grease, replace drum then adjust until the drum can't move, and back off 2 clicks.
This is because I've found a decent layer of dust and dirt caked on the inside of the drum, so the adjustment would be off. Just did mine that way both sides for the first time in about 80,000km, no issues. Park brake actuation is smooth and noiseless.

Adjusters are in a different position on opposite sides of the vehicle.
On one it’s about 11 o’clock, the other about 5 o’clock.
Don’t lose the small plastic plug!
If you do lose the plug you can use a typical grommet from repco. I can't remember the exact size though.
How do I put the tranny in neutral as it always goes to Park when I switch it off?

Backing off two clicks isn't far enough. Do a search for Bodsys Brake Bible (or something similar), it has all the info you need.
