Why not use green LED's ?

Technically you probably could use green led's... but the luminous intensity of green led's is 11.9 lumens compared to the white ones which are 29.6 Lumens. I'd expect by the time the green led light passes through the green filter you will have lost some light. Though if you manage to carefully remove the inbuilt green caps from behind the instruments it shouldn't pose a problem.
I originally planned on taking out all the caps and using red led's (16.2 Lumens). I did that with my voltmeter and it was quite a stunning red!... but I unfortunately destroyed the voltmeter while trying to remove the green inbuilt cap..Hence I recommend just leaving the instruments as they are and using the higher intensity white led's!
