Ed, airflow code will most likely be triggered by Overboost, other EGR and Air con etc are standard Defender faults here in Aus, not a worry. Injector open cicuit or open load is possibly down to wiring loom etc, Definately get the MAF readings checked with Nanocom or similar, adle it should be 59 to 62 Kg/hr, and should exceed 590 to 600 under hard driving
No need to use a Rovacom etc when fitting injectors to new engine as long as they go back in the same positions, and for goodness sake MAKE SURE they use new sealing washers and Orings!!!! 
You can't melt pistons by leaning out a diesel, overfuelling WILL do it.
