Without doing any sort of analysis,I would be looking at the radiator being partially restricted.

Ignition timing, over concentrated coolant, cooling system not maintaining pressure, fracture in the head gasket, partially blocked radiator externally or internally or internally suffering from corrosion symptoms or externally damaged fins. Pump worn or corroded, thermostat not functioning properly with temp or flow - is that the correct thermostat, it sounds very cold and I'm not sure if that alters the fuel mapping. Perhaps damaged or partially blocked exhaust system.

That is the wrong thermostat. It is meant to be 88 degree from memory.
I'd get your radiator rodded. Unless it has been replaced or rodded in the past few years then it will be money well spent anyway.

my bet is clogged radiator, providing its got reasonable coolant in it.

if your doing more than 70 k's or so then just the air comming in the front of the car will be more than the viscous fan in good nick could pull so it rules out the fan and fan clutch.

Otherwise water pump, but then the thing wold definately overheat at slow speed / idle much quicker, and uusually you get a good weep out of the hole at the bottom.

did it only start after new thermostat? is so then i would think pump.
i had a old datto years ago with a rs pump and thermostat, it ran fine till i replaced one the it flowed to much and i had to change the other aswell.
check advance and use a multimeter to test sensor and veryify with infared temp prob.

no, it was happening prior to thermostat, thats why i put one in (it didnt have one when i got it) i assumed it would be better on the cooler thermostat but i guess if it doesnt give the coolent a chance to cool before opening it would run hotter, but this actually boild over, there are a few suggestions i will try, timing is set at 5deg BTC so all good there, and no leaks in coolent section, the only time it loses coolent is when i allow it to boil over, but it does my head in being only uphill, WHY Uphill?
