That is what happens with the water temp guage, if there is no water near the temp guage it may not read correctly. The idea of the water sensor is that the sensor does not activate whilst water makes a circuit across the sensor. Once water is removed the sensor should activate the alarm. Light, audible or both.
They seem to offer a solution, but I have also been told the loss of water can be rapid and the engine must be shut down quickly to avoid damage and this sometimes does not occur.
Lots of urban myths seem to float around this one as well.
