You almost certainly won't get the gasket from your local bloke - depending on just where you are, I'd give Land Vehicle Spares in Silverdale (near Warragamba) a call - they almost certainly have them although you may need to buy an engine gasket set. Failing this I would get a sheet of gasket material from your local bloke and make one, or as a last resort use a good quality silicone gasket former.
The recommended coolant in the owners manual (just looked it up) is soft water or rain water with antifreeze added in freezing weather. But green anticorrosion would be OK. This engine was designed before the invention of "coolant". One point made in the manual, worth noting is "for the diesel engine, do not run it without water, even for very short periods". This is because the high heat transfer rate will damage the injectors.
