Ahh this is hard and frustrating. I've felt your pain - and installed a brand new loom (and cooked it, but that is now sorted... almost).
The best recommendation that I can make is to sit down with a few copies of the wiring diagram and the colour code and systematically work through it. Draw over the wiring diagram with a marker noting voltages and where you get a break in the circuit.
There are a few circuits that are connected to the ignition that are hard to work out - like the oil pressure light, reverse light and centre diff lock warning light.
What relay is clicking is hard to tell over the internet. Sadly, to really fix it you might have to drop the dash and systematically work through each wire. You really can't do this with the dash installed as you can't trace between the instrument cluster and the fuse box.
Don't bypass relays, you will end up cooking things.
