If your only going to do 10,000kms a year the cost of going from petrol V8 to diesel will take 10 years plus to recover.
If your hearts set on a rrc just get a 90-94 and do it up. Instead of a 300 tdi have a far cheaper v8 spare to replace the original if it plays up. There is a done up D2 in the markets with a 4.6 v8 in WA for 16k which could be close to the end cost of a rrc-300tdi conversion.
Put a cargo barrier behind the seats in all 3 options(rrc, disco,1,2) so you can pack higher.
Also I know you don't like electronics but another option could be LPG with direct injection. We had this on our old prado and it was so much better than the old system. It injects LPG directly into each cylinder so you don't ever get a backfire in the intake, it uses less gas- on petrol it was 13_14, LPG was 14.5-15.5, and the power was identical. Compared to our earlier prado and another Holden it was ideal. The older prado did 13_14 on petrol and 18+ on gas.(all figures are per hundred kms) and was down on power on gas. The other thing is with the LPG injection there is way less smell of gas.
