2. We still don't know whether our van will be 'touring' (standard height), or 'outback' (higher). This purchase factor will determine whether we have a standard HR tongue going into the standard LR receiver, or if we will purchase the new Mitch Hitch (which I have been following Peteren's job on).  Our Disco is a tight fit in our garage and this hitch will need to be removed I believe for the car to fit, so it's important it's easily removable. All ok?
A Mitch Hitch is not a easy thing to fit or take off and the suppliers used to recommend that you replace the bolt and neoprene bush every time you take it off. A Mitch Hitch is a good thing, we have one on the D3 for towing our 2.5 ton off road Jayco van, wouldn't be without it for going off road or even dirt road's. The D4 hitch is better than the D3, but only marginally.
3. We already have a Red-arc tow pro that has been installed by a auto-elec. However after reading the EBC thread it is causing me to lose sleep believing the auto elec would definitely have wired it to the brake switch. Although I'm a mechanic by trade I am by no means electrically minded whatsoever. Any advice here.... 
Nope, other than asking the installer how he installed it or getting it checked.
4. To assist in the ease of removal/installation of the tow hitch I will be flogging off the white trailer plug for a Anderson plug, I believe this will also charge the battery on the van, correct? Should I replace the LR black 7 pin plug, why/why not? 
You can leave the black LR plug if you like, have the Anderson plug fitted above the 12 pin flat plug it all fits in easy next to the Mitch Hitch. I used to use the Anderson plug to try and charge the house battery's, but decided a better way was to fit solar panels on the roof of the van that charge the battery's even when driving, much better alround. I use the Anderson plug to provide power to a 240v inverter fitted next to the 3-way fridge to provide decent 240v power so the fridge stays cold when driving. 
5. What plug does a standard Jacyo come with? If I upgrade the Disco to a flat 12 pin, will the Jayco need the same? If so, what's the point of upgrading to a 12 pin? 
Jayco's always have 12 pin flats, a standard Disco 7 pin just won't do the job, as far as I know you don't really have a choice on that
If there is anything else needed prior to towing a van please let me know. 
Good removable extendable towing mirrors and if the budget allows a caravan fitted rear view camera, get it wired when you get the 12 pin fitted.
