My thoughts if you plan on using it for 4wding then put on the smallest rims you can fit over the brakes.
A mate of mine tows this with 19's on his D4 all over WA. Without the caravan, he has taken his D4 onto some pretty gnarly tracks. He drives to conditions and from memory, keeps a second spare in his van. For peace of mind I would add a TPMS to your list of goodies. Personally, I think your trip is quite do-able with 19's if you drive sensibly.

I currently run Pirelli Scorpian AT Plus tyres on the 19” wheels of my D4. If I wanted to head up Cape York, I would put my extra spare wheel on the roof rack along with an extra carcass and head off!
Majority of the cape is graded superhighway for mining trucks going to Weipa etc so the reality is that you will only need great tyres for a small part of the trip. If it already has new Pirelli ATs on it I would save the money and just make sure you have a second spare. There aren't any big tyre places up there obviously so even 18"s are largely irrelevant for getting something up there.
I have had a couple of sets of Pirelli Scorpion (both ATR and AT Plus) on Prados and have loved them. Admittedly they were smaller diameter etc. You'll do it no problem as long as you are sensible.
Same dillema exactly, albeit half a world away. Terrein in question is rocky desert, lots of gnarly stones and sharp ledges that will chew my 19s to breakfast if I dare lower pressure. So I got this advise to raise pressure. yup, raise. given we are talking hard packed and dry ground, the Terrein response including rear locker can reasonably compensate for the reduced traction. yes ride will be a bit less comfy.
so my question is, did anyone try this tactic? does it save tires? what pressure worked for you? My tires are AT, no MTs available here.

I've done the Cape twice I run 24 front 30 rear.
I did once attempt to change a tyre as a test in the driveway. I got it off by using a jack to the car, under the tow hitch, to a 2x4 across the tyre to break the bead I managed to get it off but no way could I get it back on. Just if you're thinking of taking a carcass.
I had punctures with a name brand but having switched to Maxxis have had no further issues, except for a bolt through the tread at Moreton telegraph station, put a plug in it and still running on it.
I'm in the northern beaches of Sydney and can lend you a spare if you wish.
As others have said, slightly lower pressure and back off the loud pedal. It took me a while and a few dollars to learn to back off.
When fitting MAXXIS remember to register on line with them for their "no cost replacement for irreparable punctures" scheme. I just found out about this "not happy Jan" when ordering a replacement for a sidewall puncture.
Very happy with the tyres at 13 months and very little wear. Some bad roads use included.
