I was looking at the internal footage too, in particular to see if the bottom of the window sill is at the level the outside view indicates. Not easy to tell. But looks like sill level is set.
The internal shots on the video tell me it's finished, the A pillar surround is production I would say. Regardless it will evolve but I suspect only by degrees. Pre-production, off the line, not by hand, should be what we are seeing. As production lines these days are normally capable of building more than one type of vehicle the longer the lead into full production and the more pre-production you can get out the better for the final product.
If as rumours are suggesting the Defer will come from a new facility in Europe the will want to have it bedded down well and truly before going live. So that may be another reason for using 2019 as the R&D for the facility as well.
But you would anticipate that production would be timed to make vehicles available globally at least 2-3 months prior to public release. That is the normal time frame to allow for media launch's et al. Just can't find the new car release calendar for 19 as yet but it will already be out there at least for the first six months of the new year.
Whilst most of the talk to date has been around tyres and design I am going to be interested in technical specifications for; roof load, ball weight and towing capacity, fuel capacity and of course accessories.
We still have a long way to go with this

The Discovery has also been moved to Slovakia as JLR cuts costs and avoids the Brexit mess, which will result in a 10% tariff on British products imported into the EU.
So current defender approach is around 47 deg and departure angle of 35 deg.
New one looks to around about match the current on approach (with stock bumper) and smash current departure with 50 deg.
I imagine it also wins massively with ramp over and under pumpkin clearance being long travel independant on all corners.
Its east to see with F/R lockers and ETC + standard or optional cross linked bags it will be far more capable than the outgoing defender.
A slight reduction in departure angle wouldn’t be the end of the world,but would give more luggage room,and maybe a bigger fuel tank,or whatever under.
