It does have straight cut teeth, so might be a touch howly, although it's debatable whether you'd hear it over the rest of the Defender noise

I would suggest that yes the Td5 can reliably stick 500Nm out all day IF set up correctly, monitored and cared for.. (IE EGT max monitoring, coolant temp monitoring etc etc.)
The issue would be that in standard config even with a VNT it will not be a clean burn to achieve these results, no matter if you have 25psi and some big intercooling it will still smoke. Lots, when trying to map it to 550+Nm.
The trick I would imagine would be to trial 30+ psi, some huge compound turbo setup, matched to big intercooler/s and some serious exhausting.
You may require some deck O rings ,some custom pistons and maybe a different profile injector lobe/ cam lobes to achieve this, but I would hazard a guess and say the bottom end would take it.
After that, many, many mapping hours would be required by someone who is competent at mapping high output diesel engines and has the software etc etc but yes all this would be achievable.
then trans options....I would hesitate to recommend anything less than a full race type of dogbox for a manual, or you could go 6 spd allison auto with a compushift. These can easily take 800Nm....

I didn't even consider low range, after all this engine will be a trans killer in low range if used at full noise
I would suggest it is being built for high range hard road use/ towing or high speed slogging through sand etc. No need for those stratospheric torque numbers when crawling around with a big reduction case. keep the weight and gear ratios down to achieve good crawling characteristics.
